As with every vintage, we gather at daybreak a loyal crew of employees, friends and family and ascended upon Destin Vineyard to harvest our bounty of Syrah grapes. Selected rows are farmed specifically for our Rosé to ensure a balance of acidity, aromatics and color. Perfect whole clusters are gently pressed to beautiful pale pink hue.
TASTING NOTES
A long, very cold fermentation ensures the capture of the most delicate aromatics. The initial blast fills the nose with tart red fruit, cherries, strawberries and raspberries, layered underneath are hints of stone fruits, melons and fine notes of citrus. This complex bouquet leads to a palate of sprightly acidity and a salty minerality, followed by a lovely array of orange zest and white cherry. The lengthy finish lets you savor the wine and the moment.
Enjoy this wine with a grilled peach salad with burrata or melon and prosciutto. It will also be the perfect match for a Dungeness crab sandwich or your favorite salmon dish.
